Delicious Superfood Eggnog

This festive treat is not only delicious but also helps to support your digestion, with Maca helping in times of stress and Lucuma working as a fibre-packed digestive tonic.

 

Ingredients

Maca powder* – 3 teaspoons

Lucuma powder* – 3 teaspoons

Cashews – 200g

Filtered water – 480ml

Coconut milk – 1 can, full-fat

Medjool dates – 6 dates, pitted

Vanilla extract – 4 teaspoons

Himalayan pink salt – ½ teaspoon

Nutmeg – 1 teaspoon, freshly grated

 

Directions

  1. Place the cashews in a medium bowl
  2. Cover completely with boiling water and allow to soak for at least 30 minutes
  3. Drain and rinse the cashews then place them in a high-speed blender. Add in the fresh water and blend with the cashews on high for about 2 minutes or until smooth
  4. Add in the remaining ingredients and blend on high again for another two minutes or until the dates are completely blended
  5. Serve chilled or warm and be sure to consume within a few days
